Ice Cream


I made a couple of batches of ice cream with my daughter the other day. It was good. I used a very rich recipe for the basic custard.

1 cup of sugar

1/4 teaspoon of salt

7 egg yolks

1 1/2 cups half-and-half

1 tablespoon vanilla extract

The first batch was vanilla and it came out delicious! Mixed the eggs yolks and sugar. scalded the half-and-half combined them and let that cool, and later added the heavy cream. put it in the freezer until just the edges of the custard started to freeze. Put the whole thing in the ice cream machine and after 40 minutes or so and it was ready. I let it harden in the freezer overnight and Damn! With the chocolate chip ice cream, I added a cup of unsweetened cocoa powder to the basic custard, and then added 2 Lindt extra dark chocolate bars (85 % cocoa) frozen and crumbled to make chips. Yes, yes, yes !!!!

    My daughters and I recently made avocado ice cream (with coconut milk). Let me know if you’re interested in the recipe. It sounds weird but the taste was WOW! So rich & creamy…

    How much heavy cream???????????
